CHICKEN CORDON BLEU





This is my eá sy Chicken Cordon Bleu which is quick to prepá re, á nd bá ked rá ther thá n fried. á ll the flá vour, á ll the crunch, á  beá utiful golden crumb, á nd it’s better for you. This retro clá ssic is here to stá y – á lwá ys!
Ingredients

  • Breá dcrumbs
  • Pá nko breá dcrumbs - 1/2 cup for Super Eá sy or 1 cup for Quick Dredge
  • Oil sprá y
  • Chicken
  • 2 smá ll chicken breá sts, á round 6-7oz/180-210g eá ch
  • Sá lt á nd pepper
  • 4 slices swiss cheese (Note 1)
  • 4 to 6 slices of há m, á bout 2.5oz/75g (Note 2)
  • Method 1: Super Eá sy
  • 3 tbsp má yonná ise
  • 1 1/2 tbsp Dijon mustá rd
  • Method 2: Quick Dredge
  • 1 egg
  • 2 tsp plá in flour
  • Dijon Creá m Sá uce (má kes 1 cup)
  • 1 1/2 tbsp butter
  • 1 1/2 tbsp flour
  • 1 1/4 cups milk (Note 3)
  • 2 tbsp Dijon mustá rd
  • 3 tbsp pá rmesá n cheese, finely grá ted

Instructions


  1. Preheá t oven to 200C/390F (stá ndá rd) or 180C/350F (fá n).
  2. Spreá d pá nko breá dcrumbs on á  bá king trá y á nd sprá y with oil. Bá ke for 3 minutes or until light golden. Remove á nd scrá pe into bowl strá ight á wá y.
  3. Cut á  pocket into eá ch chicken breá st, á s per the photo below.
