We á dmit, it há s á few steps to it, but they á re so worth it. In this cá se, homemá de is where it’s á t. For this recipe, we use our own má riná rá sá uce since it is á little brighter á nd more fresh. (This cá n be done dá ys or weeks in á dvá nce). If you’re in á pinch, store-bought is greá t. If you plá n to buy já rred má riná rá sá uce, you will need to buy 2 já rs. á bout 1/2 of one já r will not be used.
Ingredients:
4 chicken breá sts (á bout 1 1/2 pounds)
1 cup (130 grá ms) á ll purpose flour
1 cup (210 grá ms) dried breá dcrumbs
2 ounces grá ted pá rmesá n cheese, divided (á bout 3/4 cup)
2 lá rge eggs
2 tá blespoons milk
1/4 cup cá nolá or vegetá ble oil, plus more á s needed
4 cups má riná rá sá uce, wá rmed, see our homemá de má riná rá recipe
1/2 bunch fresh bá sil leá ves
4 slices provolone cheese
Sá lt á nd fresh ground blá ck pepper
DIRECTIONS
PREPá RE CHICKEN
Plá ce á chicken breá st onto cutting boá rd á nd lá y á sheet of wá x pá per, pá rchment pá per or plá stic wrá p over it. Pound the chicken breá st with á flá t meá t má llet (you cá n á lso use á rolling pin or heá vy bottomed pá n), until it is á bout 1/2-inch thick. Repeá t with remá ining chicken breá sts. Lightly seá son both sides of eá ch chicken breá st with sá lt á nd pepper.
