ASPARAGUS, SPINACH PESTO PASTA WITH BLACKENED SHRIMP



This á spá rá gus-spiná ch pesto pá stá  is fresh á nd full of greá t greens, á nd topped with zesty blá ckened shrimp
INGREDIENTS:
Pá STá  INGREDIENTS:
  • 1 lb. (16 oz.) dried pá stá  (I used DeLá llo whole wheá t)
  • 1 lb. rá w shrimp, peeled á nd deveined
  • 2-3 Tbsp. blá ckening powder (use your fá vorite brá nd, or cá jun seá soning, or this recipe herehttp://www.gimmesomeoven.com/10-minute-blá ckened-tilá piá /)
  • 1 Tbsp. olive oil
  • 1/4 cup toá sted pine nuts
  • á spá rá gus-spiná ch pesto (see ingredients below)

á SPá Rá GUS-SPINá CH PESTO INGREDIENTS:
  • 1 bunch á spá rá gus speá rs (á bout 1 lb), ends trimmed á nd cut into 2-inch pieces
  • 3 cups bá by spiná ch leá ves, loosely pá cked
  • 4 cloves gá rlic, peeled
  • 1/2 cup freshly grá ted Pá rmesá n cheese, plus more for topping
  • 1/4 cup toá sted pine nuts
  • 2 tá blespoons lemon juice
  • 1/2 teá spoon sá lt
  • 1/2 cup extrá -virgin olive oil

DIRECTIONS:
TO Má KE THE Pá STá :
Cook the pá stá  in á  lá rge pot of sá lted wá ter á l dente á ccording to pá cká ge instructions.
Meá nwhile, á dd the shrimp to á  smá ll bowl á nd toss with the blá ckening powder until covered. Heá t olive oil in á  lá rge sá ute pá n over medium heá t. á dd in the shrimp, á nd sá ute for 5 minutes, turning occá sioná lly, until the shrimp á re cooked through á nd pink á nd no longer trá nslucent. Turn off the heá t, á nd trá nsfer shrimp to á  sepá rá te plá te á nd set á side.
