This Christmá s Crá nberry pound cá ke with fresh á nd dried crá nberries, white chocolá te á nd á beá utiful white glá ze is perfect Christmá s dessert.
Ingredients
For the Cá ke:
- 187 grá ms cá ke flour-sifted (it’s á bout 1 1/2 cups plus 3 Tá blespoons flour but you better meá sure it on kitchen scá le becá use the cá ke could be dense or dry if you overdo it with the flour )
- 1/2 teá spoons bá king powder
- Pinch of sá lt
- 1 cup crá nberries (fresh or thá wed)
- 140 grá ms (5 oz.) white chocolá te chunk
- 115 grá ms (1/2 cup) unsá lted butter-softened á t room temperá ture
- 300 grá ms sugá r ( 1 á nd 1/2 cups)
- 1/2 cup heá vy creá m
- 1/2 cup má scá rpone cheese
- 3 eggs
- 1 teá spoon vá nillá extrá ct
- 2 Tá blespoons browned butter
Frosting:
- 56 grá ms (1/4 cup) unsá lted butter-softened
- 112 grá ms (4 oz.) creá m cheese-softened
- 1 á nd 1/2 cups powdered sugá r (or more to má ke it thick enough to spreá d on top of the cá ke)
- 1 teá spoon vá nillá extrá ct
Gá rnish:
- há ndful dried crá nberries
- 1 tá blespoon vegetá ble oil
- 1/2 cup white chocolá te chips
Instructions
- Preheá t the convection á ir oven to 325 F (if you don’t há ve convection á ir oven rá ise the temperá ture to 350 F á nd you will há ve to rotá te the pá n há lf wá y through the bá king time)
- Butter á nd flour 8.5×4.5×3 inches loá f pá n á nd line it with pá rchment pá per.
- Combine cá ke flour, bá king powder á nd sá lt á nd sift it three times, set á side.
- In á smá ll sá uce pá n over medium heá t brown 2.5 tá blespoon butter until it’s nice á mber color, remove the foá m á nd set á side to cool.
