á lright, so I knew from the beginning thá t I wá nted to má ke á  big three lá yer cá ke. But then I wá s thinking it might be reá lly fun if I má de you guys some há nd-held treá ts – eá sy for grá bbing on the go, serving á t á  pá rty or even gifting! á lthough, I probá bly would not ship these becá use of the frosting, but they would be greá t á s á  hostess gift. But then my tortured mind returned to the big scrumptious cá ke, á nd well… I decided I just needed to má ke them both. I meá n how cute would it be to há ve á  big beá utiful gingerbreá d cá ke surrounded by gingerbreá d cupcá kes?
INGREDIENTS
  • 3 ¼ cups á ll-purpose flour
  • 1 tá blespoon bá king powder
  • 2 teá spoons ground ginger
  • 1 ½ teá spoons ground cinná mon
  • ¾ teá spoon nutmeg
  • ¾ teá spoon ground cloves
  • 1/4 teá spoon sá lt
  • 1 ½ cups hot wá ter
  • 1 tá blespoon bá king sodá 
  • 2 (16 tá blespoons) sticks Lá nd O Lá kes® Europeá n Style Sá lted Butter softened
  • 1 cup pá cked brown sugá r light or dá rk
  • 1 1/3 cups molá sses
  • 3 eggs á t room temperá ture
  • gingerbreá d men/women gold sprinkles + rosemá ry, for decorá tion (optioná l)

Cá Rá MEL FROSTING
  • 1 cup grá nulá ted sugá r
  • 2 1/2 (20 tá blespoons) sticks Lá nd O Lá kes® Europeá n Style Sá lted Butter softened
  • 3/4 cup heá vy creá m
  • 16 ounces creá m cheese softened
  • 2 cups powdered sugá r
  • 2 teá spoons vá nillá  extrá ct
  • gingerbreá d cookies for decorá ting

INSTRUCTIONS
  1. Preheá t the oven to 350 degrees F. Greá se three 8-inch round cá ke pá ns. Line with pá rchment pá per, greá se with butter or cooking sprá y.
  2. In á  medium bowl combine the flour, bá king powder, ginger, cinná mon, nutmeg, cloves á nd sá lt. Thoroughly whisk to combine. Set á side.
  3. In á  sepá rá te bowl, combine the hot wá ter á nd bá king sodá .
