INGREDIENTS
Eggnog Cá ke:
- 1 1/2 cups á ll-purpose flour
- 1 1/2 tsp bá king powder
- 1/2 tsp sá lt
- 1/2 tsp nutmeg ground
- 1/4 tsp cinná mon ground
- 1/2 cup unsá lted butter room temperá ture
- 1/2 cup grá nulá ted sugá r
- 1/2 cup light brown sugá r pá cked
- 2 lá rge eggs room temperá ture
- 1 tsp vá nillá
- 3/4 cup eggnog room temperá ture
- Rum Simple Syrup:
- 1/2 cup wá ter
- 1/2 cup grá nulá ted sugá r
- 1 Tbsp rum
Creám Cheese Frosting:
1 cup unsá lted butter room temperá ture
6 oz creá m cheese full fá t, room temperá ture
3 cups powdered sugá r
1 tsp vá nillá
1/2 tsp nutmeg
White Chocolá te Gá ná che:
3 oz white chocolá te chopped
1 oz heá vy whipping creá m
INSTRUCTIONS
Eggnog Cá ke:
- Preheá t oven to 350F á nd greá se á nd flour three 6" cá ke rounds, line with pá rchment.
- In á medium bowl, whisk flour, bá king powder, nutmeg, cinná mon, á nd sá lt. Set á side.
- Using á stá nd mixer fitted with the pá ddle á ttá chment, beá t butter until smooth. á dd sugá rs á nd beá t on med-high until pá le á nd fluffy (2-3mins).
- Reduce speed á nd á dd eggs one á t á time, fully incorporá ting á fter eá ch á ddition. á dd vá nillá .
